Maple Bacon Breakfast Muffin

We had the best morning ever and now you can too by following this recipe for Maple Bacon Breakfast Muffins. You're welcome.

Maple Bacon Breakfast Muffins

  • 2 cups flour
  • 1/4 cup brown sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 10 strips cooked Applewood bacon, set 2 aside - crumble remaining 8 pieces. (Substitute turkey bacon or smoky maple bacon tempeh for kosher & vegan options)
  • 1/4 cup pure maple syrup
  • 2 tbsp canola oil
  • 2 tbsp bacon drippings, cooled
  • 1 egg (vegan option: substitute 1/3 cup applesauce)
  • 1 cup milk (vegan option: substitute almond milk)

  1. Preheat oven to 350 degrees and grease 10 cups of a 12-cup muffin pan with cooking spray.
  2. Combine flour, brown sugar, baking powder, and salt in a large bowl. In a smaller, separate bowl, whisk together canola oil, bacon drippings, egg, maple syrup and milk.
  3. Pour wet ingredient mixture over dry ingredient mixture, and stir with large wooden spoon until just combined. Fold in bacon crumbles.
  4. Fill muffin cups 2/3 way full with batter, and bake at 350 degrees for 15 minutes or until a toothpick inserted in the center comes out clean.
  5. Break remaining 2 pieces of bacon into small bite sized pieces and stick into the top, center of the muffin.
  6. Let cool while you prepare the glaze.

Maple Glaze:

  • 1/2 cup powdered sugar
  • 3 tbsp maple syrup
  • 1 tsp milk

  1. Whisk everything in a small bowl until glaze is smooth. Add a little more powdered sugar to thicken if needed.
  2. Drizzle glaze over cooled, bacon-topped muffins and enjoy!

Makes Approximately 10 muffins

First off let us introduce to you "T's & F's". From now on we will be posting random thoughts and feelings (hence "T's & F's") of a Zoya Fairy. So without further adieu today's T's & F's...

We need it, we crave it and unfortunately there's never enough time for it. Bacon (turkey version optional), eggs with a side of pancakes and maple syrup drizzled/poured over all of it, sausage, hash-browns and a big glass of orange juice to wash it all down...whoa okay *wipe drool from mouth*. Unfortunately like many of you, the Fairies have been grabbing their measly on-the-fly breakfasts that consist of a frozen bagel, a yogurt or oatmeal. After all, you need time to polish your nails (priorities ladies).

Earlier this week one of our Twitter followers tagged us in a BuzzFeed post about breakfast tacos. As I read the post the growls in my tummy got louder and louder. As I looked around the office I realized that it was 9:55am and all the Fairies had the same look in their eyes: HUNGER!! We simultaneously attacked the office stash of M&M's and started planning our lunch!

Pumpkin White Chocolate Muffins


By popular demand, here is the recipe to the Pumpkin White Chocolate Muffins that was posted on the Zoya Nail Polish Instagram earlier this week! These delicious treats are perfect for fall, and a great way to satisfy that sweet tooth all the way through the holidays! Recipe via MomFoodie at blommi.com. Yields 12 muffins.


What You'll Need: 
  • 1 cup pumpkin (pureed) canned is fine or pumpkin pie filling
  • ¼ cup canola or vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbs maple syrup
  • ¾ cup sugar
  • ¼ cup brown sugar
  • 1¼ cup flour
  • 1½ tsp. baking powder
  • ½ tsp. kosher salt
  • ½ tsp. cinnamon (sometimes we go with 3 tsp!)
  • ¼ tsp. cardamom
  • 1 cup white chocolate chip
Let's Bake!

  1. Preheat oven to 350°.
  2. Mix thoroughly: pumpkin, sugars, oil, syrup, egg & extract.
  3. In another bowl, mix: flour, baking powder, salt and spices.
  4. Add the flour mixture to the bowl with the pumpkin one and mix well.
  5. Add the white chocolate chips and stir until evenly distributed
  6. Pour batter into muffin tin, lined with paper baking cups.
  7. Bake for approx. 24-27 minutes, until toothpick pulls clean from center.
  8. Cool & serve.
